Smoke over Sugar Maple Charcoal for 5 hours at 225 - 250 degrees.
Rub with Olde Towne Dry Rub and brought to room temperature.
Wrap in heavy duty foil at 3 hours and put back in smoker.
Pull from smoker and wrapped in towel and placed in cooler for 1.5 hours.
Pull from cooler and served with BBQ sauce.
